烏豆塘虱湯
Pond Catfish and Black Bean Soup
這湯能補氣血﹐ 婦女貧血､營養不良﹐最宜飲用。
Ingredients:
5 oz (160g) black bean
1 lb (450g) pond catfish
5 oz (160g) shin of pork
1 thick slice ginger
Method:
1. Stir fry black bean in wok without adding
oil until bean membrane cracked. Wash with water.
2. Cut open fish. Scald in boiling water for a while.
Shave off sticky tissue and wash. Wash shin of pork.
3. Bring 10 cups of water to the boil. Put in all ingredients.
Parboil for 2.5 hours. Season with salt. Serve.
